Halloween recipes are a unique challenge for foodies. There are lots of festive recipes that look spooky, but sometimes they’re not too tasty. The amount of time these take, however, doesn’t mesh with the quick and easy Halloween recipes most people really need when they’re pressed for time after coming in from the cold.

Remembering the harvest in Halloween recipes

Halloween recipes are often focused on looking spooky. The timing of Halloween, however, makes it perfect for tasty, fast, hearty harvest recipes. There is an abundance of flavorful and hearty ingredients available — and making use of them for Halloween is the perfect thing to do.

Curry stuffed apple faces – Halloween recipe

If you are in need of a spooky but fast, flavorful dish, then you can serve up faces. Core four apples and use a small paring knife to cut faces in the meat of the apple. Just be sure not to cut all the way through. Combine 2 cups of cooked rice or quinoa with a can of coconut milk and 2 tablespoons curry powder, then simmer until it is reduced to a thick sauce. Stuff the apples with the curried grain, and bake at 350 for 30 minutes. The apples will shrink, which makes them look spooky, and the curry will look like brains spilling out of the top.

Black and orange butternut squash soup – Halloween recipe

Butternut squash is practically designed for Halloween recipes. Bright orange and tasty, the squash also cooks wonderfully well in a crockpot. Saute a chopped onion with a few cloves of chopped garlic in two tablespoons of butter. Peel, seed, and chop one butternut squash. Mix the ingredients with three cups chicken broth. Cook the whole mixture in a crockpot set on high for at least three hours. Blend in a food processor, blender or with an immersion blender. Mix in one cup of cream. Using a combination of red, blue, and yellow food coloring, dye one cup sour cream black. Serve up the soup and swirl in a few tablespoons of the black sour cream.
